We spent two days with the Cavit family.  CAVIT is actually a business name and not a family
name.  It started in the 50's and now is one of the biggest wine co-operatives in Europe.  Cavit
provides leadership in wine making, research, marketing and distribution to it's members and
smaller co-operatives.  However, when I say family, I mean that after two days of sharing time and
wine together that's how we felt about each other.  

On our fourth day of the Olive Garden's Wine Ambassador tour of Italy was our first visit with the
Cavit Family and it began with a tour of the winery lead by Renzo Forti, the Production Manager.  
Then it was off to dinner at the
Ristorante Prime Rose with the rest of the Cavit Family including
Giancinto Giacomini, the General Manager, his wife Ana, and Anselmo Martini, the Chief Wine
Maker, and of course Renzo Forti.   

We had another 5 course meal and it was very delicious complimented with a 1998 Trentino DOC
Vendemmia Quattro Vicariati (4V) Rosso .  But, the best part was the dancing after dinner.  Some
of us danced the Macarena, and even I danced a jig with Ana.  Some of us sang our hearts out,
and some of us smoked a cuban cigar with Dave!  We even sang Poud Mary with Drew, the
President of the Olive Garden.  The Cavit family knows how to entertain!

On our fifth day on the OG Wine Ambassador Tour of Italy, we boarded the bus early and headed
to Trentino and Cavit's Maso Toresella Estate, for lunch with the Cavit family.  The Maso Toresella
Estate is pictured on the label of Cavit wines. It is nestled at the base of these mountains with the
Lake Toblino on one side and grapevines on the other.  As we pulled up to the estate, I couldn't
believe we were actually there.  As we entered the house, called the Villa Maria, you knew it was a
very special and beautiful place.  It is also a historic place as we learned the estate was used to
store ammunition and during WWII.  

As soon as we entered, we headed upstairs for the view of Lake Toblino and the Alps and enjoyed
grana cheese and Marwood Brut Sparkling wine.  Then, we headed downstairs for dinner (see
menu below).   The dining room acoustics were so that no secrets could ever be told in this room.  
As I spoke with Liz, I could hear Sue from the next  table over as if she was talking into my ear.  It
was really odd.  After dinner, it was picture time with the estate and the lake as our back drops.   
Being around the Cavit family such as Anselmo, Renzo, Giancinto and Anna you get a sense that
wine is a very important part of their life, but it was their passion for life that I'll remember and
treasure most.

to find out two things:  
1) the orgin of his name
because my
grandmother's name is
Anselma and 2) to learn
anything about wine
making.  But, we ended
up talking about his
passion for snow skiing.
He had the waiter pour
me some grappa and
told me to mix it into my
esspreso.  He said this
is what he drinks when
he goes skiing.  I asked,
before, during or after
skiing.  He said, when
ever.  I told him, I
imagined a hydropack
filled with grappa and
he laughed.
